Ingredients
  

Filling:

  • 4 cups cooked chicken shredded or chopped
  • ½ cup sour cream
  • ¼ cup plain Greek yogurt
  • 2 tbsp chopped chipotle peppers in adobo sauce
  • 2 tbsp cilantro
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • 1 lime juiced and zested

For serving:

  • 1 head romaine lettuce
  • 2 avocados diced or sliced
  • Lime wedges
  • Cilantro leaves

Instructions
 

  • In a food processor, blend together the sour cream, Greek yogurt, chipotle peppers, cilantro, garlic powder, cumin, and lime juice and zest. Set aside.
  • Spoon the cooked chicken into the lettuce leaves, then top with avocado and chipotle sauce, and garnish with lime wedges and cilantro. Serve!

Notes

  1. The sauce keeps in the fridge for up to 3 days. It’s best to assemble with the lettuce only when you’re ready to serve so the lettuce doesn’t wilt. 
  2. Use whatever lettuce you want to as long as it has nice broad, strong leaves. Butter lettuce, green leaf, and romaine work the best.
This recipe makes 4 servings, 4 lettuce wraps per serving, and has 5.1 net carbs.
